Eating healthy really doesn’t need to be hard or complicated. Especially if you have recipes for a few healthy staples. I love variety – I really do, but I also have a few favorites that I prepare on a weekly basis. This Healthy Hearty Spinach loaf is definitely one of my favorites and has pretty much replaced store bought, sugar laden breads from my diet.

Best part, you can eat this for breakfast, lunch, dinner or snack. Have it with a side of scrambled eggs, smashed avocado or just on its own, like I do!


Prep Time : 10 minutes

Cooking Time : 45 minutes

Serves 1o slices

What’s in it ?

180gm Whole Grain Flour

200gm Feta Cheese

3 Whole Eggs

100ml Almond Milk

100ml Coconut Oil

1Tbsp Baking Powder

Chopped Spinach – The more the better!

Salt and Chilli

How to ?

Beat the eggs and add the milk, coconut oil, baking powder chilli and salt. Whip together and add the flour, feta cheese and spinach. Combine all together. Pour the batter in a baking tray and bake at 180* for 45-50 minutes.

Tip : Wait for it to cool down for at least 1/2 an hour before cutting into slices. I like mine thick and chunky!

Store in an airtight container for up to 3-4 days.
